What’s the Deal with the Worm in Mezcal?

When you think of mezcal, you might envision the smoky flavor, the artisanal crafting process, or the tradition steeped in history. But for many, the standout feature of mezcal is the worm found in some bottles.

This peculiar addition has sparked curiosity and debate among drinkers worldwide. Let’s delve into why mezcal may have a worm, what that worm is, and whether you should eat it.

The Origins of the Worm in Mezcal

The practice of adding a worm to mezcal bottles started in the mid-20th century, primarily as a marketing gimmick. In the 1940s, Jacobo Lozano Páez, a Mexican entrepreneur, discovered that adding a worm to the bottles made the mezcal more visually appealing to consumers. The worm became a symbol of authenticity and uniqueness, distinguishing mezcal from its cousin, tequila, and creating a niche in the spirits market.

What Kind of Worm Is It?

The worm found in mezcal is not a worm at all but rather a larva of a moth known as the gusano de maguey. There are two types of larvae that may be used: the red gusano (Hypopta agavis) and the white gusano (Aegiale hesperiaris).

These larvae live on the agave plant, which is the primary ingredient in mezcal. The presence of the larvae is an indication of the plant’s natural environment and is sometimes seen as a sign of quality.

Should You Eat the Worm?

The decision to eat the worm is ultimately a personal one, rooted in curiosity, tradition, or simply a sense of adventure. Here are some considerations to help you decide:

  1. Cultural Significance: Eating the worm has become a rite of passage for some mezcal enthusiasts. It’s seen as a way to fully embrace the experience and show respect for the tradition.
  2. Flavor: The worm itself has a mild, earthy flavor that some find intriguing. It absorbs the mezcal, which can enhance its taste.
  3. Safety: The worm is safe to eat. It’s preserved in alcohol, which eliminates any harmful bacteria. Consuming the worm won’t pose any health risks, as long as you’re not allergic to it or the mezcal.
  4. Myth vs. Reality: There are many myths surrounding the worm. Some believe it has hallucinogenic properties, but this is not true. Others think it can determine the quality of the mezcal, but this is also a myth. The inclusion of the worm is more about tradition and marketing than any scientific reason.

Will O’Kahan Have a Worm?

So far, there are no plans to include any worms in our upcoming bottling of O’Kahan Mezcal. While the worm can contribute to the flavor of the mezcal, the effect is usually mild. The primary allure of the worm lies in its cultural and historical significance rather than a dramatic alteration of the spirit’s taste.
